Me and my friend live in the Caribbean and have some success at catching HUGE snook in ponds on the golf course on this island.  But it has been slow lately wanted some new ideas to maybe catch the giants out there.  We usually use weighted or free lined 8-16in live mullet on 5ft of 40-80lb Fluro with a big circle hook, any other idea would be greatly appreciated.

Looking at your pictures it looks like whatever you’re doing is working. How large are the snook in the ponds?

We caught one 2 nights ago (after an 8 month 15 trip slump)  41-42in and 33lbs,  on a 16in live mullet sunk to the bottom.

l agree what ever you are doing its producing excellent results the only thing l would change  and this is if this is the case is if you are losing alot of fish maybe switch to j hooks so you can set the hooksooner and with more force to pull the hook though the bait and into the mouth that may increase your hook up ratio  and again thats only if your pulling the hook out on a lot  but your doing very well and you could probably teach us all a thing or two.

Use  8/0 Gamakatsu Octopus SE 4X Strong J hooks. Don't use circle hooks, like commented on below you need to rip the hook out of the bigger baits. You'll get way more hook ups, and I am a fan of circle hooks, but they do not work well for big baits. Hook the mullet through the mouth, up throught the top jaw 1/4 of an inch behind their lips. So the barb is sticking up through the top of the head, but don't go to far back or you wil injure the bait, you want the bait good and lively.
